Authentic Mandarin Pancakes that are easy to make at home. Perfect to wrap up slices of Peking duck or BBQ Pork with green onions, cucumber and hoisin sauce, or use with your favourite moo shu recipe. One of my favourite dishes to order when eating out at a Chinese restaurant is Peking duck pancakes. Soft warm floury pancakes served with slices of hopefully crisp skinned duck, green onions, cucumber and hoisin sauce. They differ greatly from the pancakes we generally eat for breakfast. No egg or milk is used, and they are made from dough, not a wet mixture poured into a pan.
Ever since we left Beijing to come back to the US, one of the things we really miss is the abundance and variety of the authentic foods China had to offer including authentic Peking Duck. Whole ducks are roasted in wood-fired ovens, and the skin is roasted to a perfect crispness most of the fat renders out during the roasting process. Meat is then skillfully shaved from the duck and served with Mandarin pancakes, along with a variety of condiments. Each person could wrap their own portion and enjoy it the way they liked it at their own speed.
We took a friend here whilst staying in Singapore, she lives in the city but had never visited here before. Had a lovely meal, peking duck followed by clam scallop, chicken claypot, duck noodles using the peking duck remains , beef tenderloin, sweet and sour pork and steamed rice. More than enough for 3 people even with my husband their who eats loads!!
